Verde Pork Tacos with Pineapple Salsa

A great little change up from your regular taco fare, easy to prepare, especially using your crock pot to do the bulk of the cooking.

Ingredients

1 lb. raw pork loin, boneless, (remove visible fat)
1 1/2 cups salsa verde

Optional:

1 (7-oz.) can sliced jalapenos or 1 4 oz can green chilies mild

Place in crock pot.
Cook on high for 3 to 4 hours on high or 6-8 hours on low until pork shreds easily.

Pineapple Salsa

½ cup finely cubed pineapple
2 shallots, finely chopped
2 tbsp. fresh lime juice
¼ tsp cumin

Combine in bowl and chill.

Serve the shredded pork topped with the pineapple salsa on soft tortillas or hard taco shells.
(I like blue corn tortillas for mine)
