Unstuffed Pepper Casserole
This hearty casserole is a cinch to make, and your family will love the flavor which is reminiscent of our more formal stuffed peppers recipe. Ingredients
1 cup dry instant rice 1 1/2 lbs ground beef 2 - 3 green peppers, chopped 1 small onion, chopped 1 tsp Italian seasoning 1 jar tomato basil spaghetti sauce (26 oz) 1/2 cup Italian mix shredded cheese 1/2 cup seasoned bread crumbs a drizzle of olive oil
Cook instant rice according to directions. Set aside.
Saute ground beef with the onions and peppers in large pan until it is no longer pink. Drain excess grease off and return to pan.
Add in spaghetti sauce, seasoning and rice. Mix well. Add in the shredded cheese, toss and press mixture into a 2 quart casserole dish.
In a small bowl mix the bread crumbs with a drizzle of oil and sprinkle it over top of the meat mixture.
Bake at 350 for about 10 minutes to heat through and brown lightly.
Serve with garlic bread and a salad for a great quick family meal.
