Tomato Cheese Macaroni Casserole
Tomato Cheese Macaroni Casserole - or as we called it when the kids were young -- our go-to meal before payday. We've all had those days where we scratch our heads wondering what to make out of the scant pantry offerings that stare us in the face just before the next paycheck. This was one of our favorites -- simple, but hearty. If you want, you could add crumbled ground beef or sausage, but its also delicious just as it is. And simple too!
Ingredients
1 lb uncooked macaroni 2 cans tomato soup, undiluted 3 cups of shredded cheddar cheese 1 cup of shredded mozzarella cheese 1 onion, chopped fine
optional: 1 lb ground beef, or sausage, cooked and drained 1-2 tsp Italian seasoning breadcrumbs
Prepare a 9x13 baking pan with cooking spray.
Preheat oven to 350 F.
Cook the macaroni according to package directions. Drain and place in a large mixing bowl. Add in undiluted soup, chopped onions and cheddar cheese. Mix well.
Transfer macaroni mixture to the baking pan and spread evenly. Sprinkle shredded mozzarella on top.
Bake for 30-45 minutes.
Optional:
You may add Italian seasoning and or browned beef or sausage at the initial mixing stage. Some people also like to sprinkle breadcrumbs on top. You would do that prior to inserting the pan into the oven.
