Texas Creamed Corn
Before I moved to Texas "Creamed Corn" was something that I got when I
opened up a can from the supermarket. Thankfully -- I have learned the
error of that way of thinking. I love homemade creamed corn as a side
dish. Pure comfort food for me!
4 cups of corn (frozen or canned (drained)) 6 oz cream cheese 1/4 cup butter 1/2 cup half n half 1 tsp pepper 1/2 tsp salt
Process 1/2 of the corn in the food processor with the cream until broken down and combined. Be careful not to overdo this to the point where you've liquefied it.
Add the remaining corn to the processed mixture.
Heat in large pot on the stove top until heated through.
Add in the remaining ingredients and cook until everything is melted, combined and slightly thickened. (about 3-5 more minutes)
Serve hot.
This is great for a potluck or family get-together. Easily doubled and you can fix it in the crock pot instead of on the top of the stove.
