Add the Ingredients
5 large potatoes, peeled and cut into large chunks 1/4 cup olive oil
Coating Mix
4 tbsp flour 1/2 cup cornstarch 2 tsp paprika 3 tsp salt 1/2 tsp pepper
Cook potato chunks until then are al dente -- do not fully cook them.
Drain potatoes, and rinse in cold water until they are no longer hot. Place on a towel to help dry them. Place them in a large bowl. Add olive oil, and make toss to coat completely.
In another small bowl combine the coating ingredients. Mix thoroughly.
Add the coating mix to the potatoes. Toss completely. Spread the coated potatoes on a parchment lined cookie sheet. Bake for 30-35 minutes until nicely browned and fork tender.
** NOTE - check your potatoes 10 minutes before the ending time. If some of them are still white-ish from the coating it simply means that the oil didn't get distributed well enough. No worries. Lightly spray the white-ish ones with cooking spray and return to the oven for the final 10 minutes of cookie time.
