Tex-Mex Pork Roast
A touch of heat, and a touch of sweetness, makes this easy to make crock pot recipe a keeper! Ingredients
4 lb (approx) boneless pork roast 1/2 tsp salt 1/2 tsp garlic salt 1/2 tsp chili powder
Basting Sauce
1 cup apple jelly 1 cup ketchup 2 tbsp vinegar 1 tsp chili powder
Combine salt, garlic salt and 1/2 tsp chili powder together. Rub over all sides of the pork roast.
Place pork roast in crock pot, on high.
In a sauce pan combine ingredients for the basting sauce. Heat until apple jelly has dissolved, and sauce is smooth. (You can adjust the heat by adding more chili powder as desired).
Save 3/4 of the sauce for serving, and use the remaining 1/4 for basting the pork roast 2 or 3 times during the cooking process.
The roast took about 4 hours on high in my 7qt crock pot. You may cook it longer if need be.
