Swiss Steak is comfort food to me. I know some people make it with a tomato gravy, but I've always had it with brown gravy. Great with homemade mashed potatoes!
Ingredients 2 lbs of steak (cube or round steak work best) salt and pepper, to taste 1 c flour 1/2 c oil 1 c onion, sliced 3 c beef stock or 3 c of water with beef bouillon 1 tbsp Worcestershire sauce
Directions
Cut steaks into serving size. Season with salt and pepper and dredge in flour.
Heat oil in cast iron pan (I used my braising pan) and sear steaks on both sides. Set the steak aside.
Drain off the oil, reserving 1/3 cup. Mix the 1/3 cup of oil with 1/3 cup of flour in the pan. Brown the mixture, but stir constantly to keep it from burning. When browned add onion and continue to stir and cook for about a minute more.
Add beef stock, and Worcestershire sauce while continuing to stir over simmering heat. After about 5 minutes, place the steak back in the pan and put the lid on. Place in a 275 F oven for about an hour. Serve with mashed potatoes.
