Sweet Potato Biscuits
Ingredients
29 oz can sweet potatoes, drained and mashed 1/4 c softened butter 1/2 c sugar 1/4 c milk 2 tsp salt 3 1/2 to 4 cups flour 4 1/2 tsp baking powder cinnamon and nutmeg to taste
Directions
In a large bowl, combine the mashed sweet potatoes (you don't need to heat them up) with the softened butter, sugar, milk, and salt.
Add cinnamon and nutmeg to taste.
Mix together the baking powder and flour. Add to the mashed mixture slowly until you're able to form a soft ball of dough.
Roll out on a floured board to about 3/4 - 1 inch thickness. Cut into round shapes and place on a prepared cookie sheet.
Bake at 350 for about 20 minutes (Check at 15 minutes)
