Sweet and Sour Meatballs
Ingredients
Meatballs:
1 lb ground pork 1/2 of an onion, chopped 2 egg 1/2 cup breadcrumbs 1/4 tsp red pepper flakes 1 tsp salt pepper to taste
Sauce:
1 1/2 cups beef broth 1/2 cup white wine vinegar 1/3 cup sugar 2 tbsp soy sauce 2 tbsp cornstarch 1/4 cup vegetable oil 1/4 cup flour 2 sweet bell peppers, chopped 1 1/4 cup pineapple chunks 2 green onions, chopped
Combine meatball ingredients and roll into small balls. I managed to get 40 out of mine. Place them on a parchment lined baking sheet and place in the freezer for 15 minutes.
Combine broth, vinegar, sugar, soy sauce, cornstarch in a bowl.
Remove meatballs from freezer and dredge in flour.
Heat oil in a skillet and add meatballs a few at a time, to brown on all sides. Drain meatballs on a paper towel.
Clean skillet, and add 1 tbsp oil along with the chopped peppers. Cook for approximately 3 minutes and then add in the pineapple and green onions.
Add in broth mixture. Add in the cooked meatballs. Reduce heat in the pan, and simmer everything for about five minutes.
