Ingredients
4-5 chicken breasts, cubed 2 green peppers 1 large onion 1 cup flour 1 tsp seasoning salt 1/2 tsp pepper 2 eggs
Sauce:
1 1/2 cups sugar 1/2 cup water 1/2 cup pineapple juice 2 tbsp soy sauce 1/4 cup ketchup 1/2 cup vinegar salt and pepper to taste 2 tbsp cornstarch mixed with 2 tbsp water
Directions:
Heat oven to 350.
Beat eggs in small bowl.
In another bowl, combine flour, seasoning salt and pepper.
Dip chicken pieces in egg then in flour. Fry in skillet until browned on all sides and then place in an oven casserole dish. Do a few at a time - do not overcrowd your skillet.
Slice peppers and onions thinly, and put them over top the chicken pieces.
In a saucepan combine all ingredients, except the cornstarch mixture and heat thoroughly. Use as wisk to mix completely. Add cornstarch mixture and stir until thickened. Remove from heat and pour over top of the chicken and vegetables.
