Sugar-free Banana Blueberry Muffins
I made a batch of these guilt-free muffins to keep in the freezer to have with my coffee or afternoon tea. Easy to make a dozen at a time.
Ingredients
2/3 cup mashed banana 1 large egg 1/2 cup milk 1/3 cup light cooking oil 2 cups flour 1 tsp baking soda 1 tsp baking powder 1 cup blueberries (fresh or frozen)
Instructions
Beat egg and mashed banana together until creamy.
Add milk and oil and beat well.
Mix in flour, baking soda and baking powder. Gently fold in blueberries.
Spoon batter into prepared muffin tins. (makes 12)
