This is a quick and easy mid-week dinner that's full of flavor, will leave the visitors to your table, leaving full and satisfied.
4 chicken breasts, cut into strips. 1 c of your favorite salsa 1 package (1 oz. package) Taco Seasoning (or make your own; recipe here) 2 c water 2 c long grain rice 1 can (15 oz. can) black beans, drained 1 cup cheddar cheese, shredded
Optional toppings/garnishes: sour cream, tomatoes and black olives
Cut chicken into 1 inch strips. Brown in a skillet,
Add taco seasoning, salsa and water to the skillet, continue bring to a boil . Reduce heat, cover and simmer for 10 minutes to allow the chicken to cook through.
Stir in rice and drained beans, and then and allow to simmer to cook rice.
Sprinkle cheese on top and allow to melt, if desired.
Top with garnishes before serving, or have them ready on the table for people to add their own.
