Smoked Ham, Potato and Rice Soup
This would go well with our 7-up biscuits.
Ingredients
3 cups sliced/diced onions 3 cloves of garlic, minced 1 lb ham, diced 3 cups potatoes, peeled and diced 1/4 cup butter, diced 1/4 cup tomato paste 8 cups chicken broth 2 bay leaves 1/2 tsp dried parsley 1/4 tsp savory 1/4 tsp thyme 1/4 cup dry long grain rice
Combine all ingredients in slow cooker except for rice. Cook on high for 4-6 hours or low 6-8. Add rice and cook for another 20-30 minutes.
Serve with homemade buns or corn bread and a side salad.
