When I first met Mr Mom and things started to get serious, one of the first probing questions I asked him was "What is one food item you just can't stand?" His answer was quick and very interesting: "Sloppy Joes!"
So, needless to say, when I ventured to make tonight's dinner, I was knowingly stepping into dangerous grounds. When all I was said and done he finished two helpings in record time and was calling dibs on the leftovers for lunch tomorrow, and I'll be marking another notch on my wooden spoon by nightfall.
I love casseroles that are family friendly, and quick and easy to make and clean up. This is a great week night supper that you can pull together in no time at all. Ingredients
1 pound lean ground beef 3 green onions, chopped 1 can Mexicorn (kernel corn with green and red peppers) 1 can Manwich sauce (or you can make your own: RECIPE HERE) 1 can buttermilk biscuits
Instructions
Brown ground beef, with chopped green onions, until cooked through. Drain.
Add mexicorn (drained) and manwich sauce. Cook until heated through.
Pour sloppy joe mixture into a prepared 9 inch glass pie plate or 1 qt casserole dish.
Slice uncooked buttermilk biscuits in half and arrange them around the edge of the dish, using the remaining few in the center.
Bake at 375F for 15-20 minutes until the biscuits are cooked through.
