Skillet Lasagna
On hot Summer days, like we've been experiencing, making dinner can be a challenge. This recipe allows you to make a great meal in under 30 minutes that your family will love!
Ingredients
1 lb ground beef 1 (14 oz) can diced tomatoes, undrained 1 1/2 cups ricotta cheese 2 eggs 3 cups of your favorite marinara/spaghetti sauce 6-8 oz of no-cook lasagna noodles 1/2 cup shredded mozzarella cheese
Directions
Brown ground beef in skillet. Drain and remove to a large bowl.
Combine the ground beef with the diced tomatoes. Set aside.
In another bowl, combine the ricotta cheese and eggs. Mix until well blended.
Place 1 cup of the ground beef/tomato mixture in the bottom of the skillet. spread 1/2 the ricotta cheese mixture over top. Do not mix together, but spread the cheese mixture as best you can.
Top with 1/2 of the marinara/spaghetti sauce.
Break up 1/2 of the lasagna noodles and arrange on top of the sauce.
Repeat the layers of ground beef and ricotta cheese. Add the other 1/2 of the noodles and then the remaining marinara/spaghetti sauce.
Sprinkle the mozzarella cheese over top.
Allow mixture to come to a boil and then reduce to a low simmer. Cover and cook for about 15 minutes until the noodles are cooked.
