Skillet Chicken and Rice
This cast iron braising pan is what I used to make this recipe.
Chicken and Rice is an old favorite in our house, and this recipe makes it ready with 30 minutes of cooking time on top of the stove!
1 small onion, chopped 1/2 cup chopped celery 3 tbsp butter 2-3 carrots, diced 2 cups chicken broth 2 cups chopped cooked chicken 2/3 cup uncooked long grain rice salt and pepper to taste
Saute onion and celery in butter, until the onion pieces are translucent.
Add in diced carrot, chicken broth, rice and cooked chicken. Season with salt and pepper to taste.
Bring to a boil, and then reduce to a simmer. Cook covered for 30 minutes until rice is cooked and liquid is absorbed.
