Ingredients
1 to 1 1/2 boneless chicken breast, uncooked and cut into bite sized pieces 2 tbsp sesame oil 1/2 tsp pepper 6 cups cooked rice 1 cup frozen peas and carrots 1/3 cup soy sauce 2 large eggs 2-3 green onions diced
Preheat oven to 400F
Line large baking sheet with foil,
In a bowl toss uncooked chicken pieces with sesame oil and pepper. Spread on baking sheet. Bake 10 minutes in oven. Remove.
In a large bowl combine the cooked rice, frozen vegetables and soy sauce. Spread rice mixture on the baking sheet with chicken. Spread out evenly. Return to oven and bake 2-3 minutes.
While that is in the oven, scramble the eggs together in a skillet. When the rice mixture is done, add the scrambled eggs stirring to distribute evenly. Serve immediately.
