Seven Bean Salad
2 cans green beans, drained 1 can yellow wax beans, drained 1 can pinto beans, rinsed 1 can black eyed peas, rinsed 1 can red kidney beans, rinsed 1 can chickpeas (garbanzo beans), rinsed 1 can baby lima beans, drained and rinsed
1 small red onion chopped 1 sweet pepper (any color) chopped
3/4 cup sugar 3/4 cup vinegar 1/2 cup salad oil 1 1/4 tsp salt 1/2 tsp pepper
Combine all beans together in a large bowl. Add in onion and sweet pepper pieces.
Mix together remaining ingredients and pour over the salad. Stir to coat everything. Allow to marinate in the fridge for a few hours before serving. Stir occasionally to redistribute the beans in the dressing.
Serve cold. Refrigerate leftovers. Keeps for many days in the fridge.
