Scalloped Corn Casserole
Looking for a new side for your holiday meal? Look no further! Everyone loves corn, and this version is hearty and creamy with a pleasing crunch of a crust on top.
Ingredients:
3 tsp cornstarch 2/3 cup water 1/4 cup butter 3 cups frozen corn 3/4 tsp sugar 5 oz evaporated milk 3 cups cubed bread 1 small onion chopped 3 eggs 3/4 cup milk 1 1/2 tsp sugar 1/2 tsp salt 1/4 tsp pepper
In a small bowl create a slurry by mixing together cornstarch and water. Set aside.
In a large saucepan, melt butter. Add in frozen corn, 3/4 tsp sugar and evaporated milk. Mix well and bring to a boil.
Add in cornstarch slurry to the corn mixture, and continue to cook, stirring frequently, until mixture thickens. Set aside.
In a large bowl combine eggs, milk, onions, eggs, 1 1/2 tsp sugar and seasoning. Add in cubed bread and thickened corn mixture.
Pour into an 8x8 prepared baking dish.
Bake at 350F for 40 minutes.
Combine:
1 cup crushed rice krispie cereal with 3 tbsp melted butter
Remove corn casserole from the oven after 40 minutes and spread rice krispie crumb mixture on top. Return to the oven for 10 more minutes of cooking.
Allow to sit for 10 minutes or so to set after removing from oven, before serving.
