Sausage Fettuccine Bake
Ingredients
8 oz dry fettuccine noodles 1/2 to 1 lb Italian sausage (hot or sweet) 1/4 chopped onion 1 14.5 oz diced tomatoes 1 tsp dried oregano 1/2 cup shredded mozzarella cheese 1/2 cup Parmesan cheese 3 eggs, beaten 2 tbsp melted butter 2 tbsp dried parsley 1/2 tsp minced garlic
Cook fettuccine noodles according to package directions, drain and set aside.
In a skillet scramble fry the sausage until no longer pink. Add in onions and cook until onions are translucent.
Add diced tomatoes, undrained and oregano to the sausage mixture, and cook on summer for about 20 minutes.
While sausage is simmering, mix together beaten eggs, 1/4 cup of the Parmesan cheese, melted butter, parsley and garlic. Add fettuccine and toss well.
Place the fettuccine in the bottom of a 10 inch glass baking dish/pie plate that has been prepared with cooking spray.
Add the shredded mozzarella to the sausage mix and stir until melted. Add in remaining 1/4 cup parmesan cheese and stir gently, before adding mixture to the top of the noodle base.
Bake at 350F for 25 minutes. Slice as you would a pie to serve.
