Roasted Maple Acorn Squash
I love acorn squash. It's my favorite winter vegetable. If you're looking for a simple but memorable vegetable to add to your dinner table, I suggest this one. This version is both sweet and savory.
1 acorn squash olive oil maple syrup rosemary salt and pepper
Cut and clean acorn squash into quarters -- see the video below. Place them on a baking sheet.
Drizzle a small amount of olive oil on each piece. Brush each piece with maple syrup.
Sprinkle rosemary on each portion. Season with salt and pepper.
Bake at 425 for about 25-30 minutes.
*You could also slice the squash into smaller wedges or rings.
