Roasted Asparagus with Balsamic Browned Butter
Next to brussels sprouts, asparagus is my favorite vegetable. Look for slender, firm stalks with closed spear tips. Prepare by rinsing under cold water, and snapping the stems off where they naturally break. Save the unused portions for your vegetable stock. Ingredients
Place prepared asparagus stalks on a parchment paper lined baking sheet. Spray stalks lightly with cooking spray, and then season with salt and pepper.
Bake for 10 to 12 minutes in heated oven.
In a sauce pan, melt butter and allow it to turn a golden brown color. Remove browned butter from heat and add the soy sauce and balsamic vinegar. Mix well.
Toss roasted asparagus in the browned butter mixture and serve.
