Who knew that making jam doesn't have to involve specialized equipment, complicated recipes and instructions and could taste better in a few minutes than anything you could buy off your supermarket shelf? Two ingredients (three if you like) and no pectin. Yup. You heard me right.. You can make small batches of jam for your refrigerator in just a few minutes from the season's freshest offerings. There is no pectin in this recipe. It will make one quart or 2 pints (with a little leftover)
Also please be sure to always use sterilized jars and new lids and rings to for safety's sake.
Ingredients
2 cups raspberries (or any other berry -- blackberry, blueberry, strawberry, huckleberry etc) 2 cups sugar 1 tbsp lemon juice (optional)
Directions
Wash your fruit and place in a large, heavy pot.
Mash the berries while bringing them to a boil.
When they have boiled for 2 minutes, add in sugar. Stir to help dissolve the sugar and boil for another 2 minutes. (note: if you like a tarter tasting jam, add lemon juice now as well)
Pour hot mixture into the sterilized jar(s) and seal with lid and ring.
Store this jam in the refrigerator. This recipe is perfect for small families who want that homemade taste without the hours in the kitchen and a pantry full of jars you'll never be able to use in a lifetime.
