Quinoa Fried Rice
I love quinoa -- its so versatile and so very good for you! This recipe tastes exactly like fried rice -- but its better for you. Add chicken or pork if you like or have it just as it is. A great meal or side. Ingredients
1 cup of dry quinoa (rinsed under water) 2 cups water 1 tbsp light cooking oil 1 carrot, finely chopped 1 onion, finely chopped 2 cloves of garlic minced 1 1/2 to 2 cups frozen peas 2 tbsp soy sauce 2 eggs salt and pepper to taste chopped green onions for garnish
In a sauce pan combine dry quinoa and water. Bring to a boil, reduce to simmer, and cover for 20 minutes. Remove from stove-top, fluff with a fork and set aside.
In a skillet saute the onions, carrots, and garlic in oil, until tender. Add in the frozen peas and heat through.
In a separate skillet, scramble the eggs and set aside.
In the vegetable skillet add the soy sauce, quinoa and scrambled eggs. Mix well in corporate. Cook for another 10-15 to heat things through and allow the flavors to meld.
Add in chopped cooked meat if desired.
Season with salt and pepper to taste. Garnish with chopped green onions. Serve and Enjoy!
