Quick and Easy Autumn Soup
This soup as five main ingredients and can be pulled together in 30 minutes. Tastes like it had been simmering all day. A wonderful soup to warm your body on those cold days up ahead.
Soup
7 to 8 cups of chicken stock 2 cans shoe peg corn, drained 1 small onion, chopped 1 (11 oz) can pure pumpkin 1 cup half and half cream
Combine the chicken stock, corn and onions in a soup pot. Bring to a boil. Lower to a simmer for 25 minutes to cook the onions to a tender stage.
Add the pureed pumpkin and whisk to incorporate. While whisking add in the cream. Heat through while simmering. Do NOT allow it to boil.
The original recipe did not call for seasoning, but I added seasoned with about 1/4 tsp each of paprika and turmeric, and 1/2 tsp cumin and black pepper. Feel free to adjust to your personal taste.
