Pumpkin and Black Bean Chili
This chili was a huge hit in our house. The addition of pumpkin deepened the flavor of all the other ingredients. The seasoning was absolutely perfect. I can't wait to make this one again!
Ingredients
2 cups of cooked chicken, cubed 1 tbsp oil 1 onion, chopped 1 yellow pepper, chopped 3 cloves garlic, minced 1 (15 oz) can pumpkin puree 2 cans (15 oz each) black beans, drained 1 can (14.5 oz) diced tomatoes 3 cups chicken broth 2 tsp parsley flakes 2 tsp chili powder 1 1/2 tsp cumin 1 1/2 tsp oregano 1/2 tsp salt
Saute onion and pepper until tender. Add in garlic and cook a minute or two longer. Transfer to a soup pot.
Add the remaining ingredients. Cook on low simmer for 30-45 minutes or transfer to a crock pot and cook on low for 4-5 hours
