Potato and Pork Chop Casserole
4 pork chops salt and pepper 2 tbsp olive oil 2 cups seasoned breadcrumbs (make your own) 1 pkg dry brown gravy mix (I make my own) 2 tbsp butter, melted 1/4 cup water 3 large potatoes, cubed 1 can cream of mushroom soup 1/2 cup water
Prepare oven safe casserole dish with olive oil.
Place pork chops on the bottom. Season with salt and pepper.
In a bowl, combine melted butter, bread crumbs, dry gravy mix (2 tbsp of your own homemade mix if you go that route) and 1/4 cup water. Mix well. Place bread crumb mixture over the pork chops.
Add cubed potatoes on top of the breadcrumb layer.
Mix together undiluted mushroom soup and 1/2 cup water in a small bowl, until smooth.
