Pot Roast Meatloaf
I love this recipe. It has the homey goodness of meatloaf, coupled with the ease of roasted vegetables. It smells wonderful while its cooking. Cook it as the recipe says, or add your favorite BBQ sauce during the last ten minutes of cooking. Either way is wonderful!
Ingredients
1 lb ground beef 2/3 cup evaporated milk 1/3 cup bread crumbs* 1/4 cup ketchup 1 tsp salt 2 tsp Worcestershire sauce 1/4 tsp pepper 3 potatoes. peeled 1 large onion 3 large carrots parsley flakes salt and pepper bbq sauce (optional)
In a large bowl, mix together ground beef, evaporated milk, bread crumbs, ketchup, Worcestershire sauce and salt and pepper.
Shape meat mixture into a loaf in the middle of a 9x13 baking pan.
Cut up vegetables into large chunks and arrange around the meatloaf. Season them with parsley flakes and salt and pepper.
Cover with foil and bake for 1 hour at 375F.
Remove foil, (baste with BBQ sauce if desired) and return to oven for 10 more minutes.
* In place of bread crumbs you could use panko crumbs, or left over stuffing mix.
