Pineapple Glazed Chicken
This cast iron braising pan is what I used to make this recipe.
This recipe is from a small Texas community church cookbook from a few years back. Delicious and so easy to make!
4-6 boneless chicken breasts or thighs salt and pepper 1 (8 oz can) pineapple chunks (do NOT drain) 1/4 cup brown sugar, packed 1 tbsp butter 1/4 chopped green onions
Season chicken pieces with salt and pepper.
Brown chicken in skillet, on both sides, in butter.
Mix remaining ingredients except green onions, in a bowl, and then pour over chicken pieces in skillet.
Cook, uncovered. turning chicken every few minutes, until the liquid has mostly evaporated and the chicken is glazed. This will take about 15 minutes.
Serve over rice or mashed potatoes, sprinkling with the chopped green onions.
