Pepper and Snow Pea Quinoa
I love quinoa. Its so versatile, and healthy. There are so many recipes, both sweet and savory I want to share with you in hopes you'll give it a try too. This one can be served hot, or cold. It was even better the next day!
Ingredients:
1 cup quinoa 1 1⁄2 cups water 2 tsp olive oil 1/4 c minced onion 3 cloves garlic, chopped fine 2 cups snow peas, sliced 1 orange bell pepper, chopped 1 1⁄2 tbsp lemon juice 2 tbsp chopped parsley
Rinse quinoa before using in a fine mesh sieve.
Place quinoa in a sauce pan with the water. Stir and bring to a boil. Reduce heat to a simmer, place a lid on the pot and allow to cook for about 15 minutes until the quinoa is cooked. It will be tender and look like the photo below:
Fluff the quinoa with a fork and drain off any excess water that might be remaining.
While the quinoa is cooking, heat the oil in a saute pan. Add the garlic, and cook while stirring, then add in the onion. Continue to stir, until the onions are translucent. Add in the peppers and snow peas and saute for another 2-3 minutes.
Add the vegetables to the drained quinoa. Stir to combine.
Add in the lemon juice and parsley. Stir once again, and its ready to serve hot. Refrigerate to chill it if you prefer it cold.
