Pecan Pie Bread Pudding
Ingredients
1 loaf day old French Bread 2 1/2 cups milk 1 cup half and half 4 eggs 1 cup sugar 1 tbsp vanilla 1/2 tsp salt 1/2 cup butter 1 1/2 cups brown sugar, packed 1 cup pecans, chopped
Preheat oven to 350F.
Cube or tear bread into pieces and place in a large bowl.
In another bowl combine milk, half and half, eggs, sugar, vanilla and salt. Mix well.
Pour batter over the bread pieces. Allow to sit and absorb for 15 minutes. You may have to push some of the top pieces down to make sure they are in the egg mixture.
In another bowl combine the butter, pecans and brown sugar.
Place half the bread mixture in a 2 quart baking dish. Press down. Sprinkle half of the pecan mixture over top.
Spread the rest of the bread mixtures over top. It will come to the top of the dish. Sprinkle with the remaining pecan mixture.
Bake in 350F for 55 minutes.
