Pear Cake

You could make a simple glaze for this cake, but I love it just as it is. Excellent with a cup of coffee or tea.

4 cups chopped fresh pears
2 cups sugar
1 cup pecans, chopped
3 cups flour
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp baking soda
1 cup oil
2 eggs

Preheat oven to 300F.

Prepare a bundt pan with baking spray.

Pour sugar over chopped pears. Allow to sit for 2 hours.

Beat eggs, and pour over top of pear. Mix well.

In another bowl combine the flour, cinnnamon, nutmeg and baking soda. Mix well.  Add to the pear mixture. 

Add in the oil, and again, mix well.  Add nuts.

Pour batter into the prepared Bundt pan, and bake at 300F for 15 minutes, and then increase the temperature to 350F and bake another 45 minutes.
