Peach Fried Pies

1 cup thawed frozen peaches or 1 cup diced canned peaches 2 T flour 1 t cinnamon 3 T sugar 3 T butter, cubed 1/2 t vanilla 1 sheet prepared pastry crust Shortening for frying Powdered sugar for dusting
Place peaches in saucepan and bring to slight summer. Add all ingredients except pie crust. Stir well. Let simmer 12-15 minutes until thick and creamy looking. Set aside and let cool.
Roll out pie crust a make 5-6 3" circles using a cutter or large mug. Place on cookie sheet. Place shortening in fry pan and on low heat, let melt. Do not let it get too hot until pies are ready to fry!
Take about 1-2 T if filling (don't overfill) and place in center of crust circle.
Fold in half and press edges down to seal closed with a fork.
Place pie back on cookie sheet and repeat with remaining circles. Fry 2-3 at a time until a golden brown on both sides, and place on a cooling rack. Finish frying rest of pies.
Dust lightly with powdered sugar and move to a serving tray or plate.
