Peach Crumble
Ingredients
3 cups peach slices (fresh, frozen or canned (drained)
3 tbsp flour 1/4 cup brown sugar 1/2 tsp cinnamon 1 tsp lemon juice
1 cup flour 1 cup sugar 1/2 tsp nutmeg 1 tsp baking powder 1 egg, beaten 1/2 tsp salt
1/2 cup melted butter
Preheat oven to 375.
Layer peaches in the bottom of a 2 1/2 quart baking dish.
Combine 3 tbsp flour, brown sugar, cinnamon and lemon juice in a small bowl until combined. Sprinkle over top of the peaches.
Combine 1 cup flour, sugar, nutmeg, salt, egg and baking powder in a small bowl until mixture crumbles. Sprinkle over the peaches/brown sugar layer evenly.
Pour melted butter over the flour layer as evenly as you can. DO NOT MIX.
Bake for 35 minutes.
Serve warm with a dollop of vanilla ice-cream.
Preheat oven to 375°. Place peaches in a greased shallow 2-1/2-qt. baking dish. In a small bowl, combine brown sugar, flour, lemon juice, peel and cinnamon; sprinkle over the peaches.
Combine flour, sugar, baking powder, salt and nutmeg. Stir in egg until the mixture resembles coarse crumbs. Sprinkle over the peaches. Pour butter evenly over topping.
Bake 35-40 minutes. Serve with ice cream if desired.Yield: 10-12 servings.
