Parmesan Red Potatoes

Ingredients
4 teaspoons olive oil 6 tablespoons parmesan cheese 10-12 small red potatoes cut in half (if using potatoes more than 1-1 ½” diameter, slice potatoes into smaller pieces) Salt
Pour olive oil into a 13 x 9 x 2" baking pan.
Sprinkle parmesan cheese over oil.
Place potatoes, cut side down, on cheese.
Sprinkle a tiny bit of salt on potatoes. Not too much as the cheese has natural salt in it.
Bake at 400 for 45 minutes or until tender.
Let sit for 2-3 minutes to set cheese. Carefully remove potatoes from pan making sure to scoop under the cheese layer so it doesn’t separate from the potatoes.
