Parmesan Crusted Pork Chops
Ingredients
4 boneless pork chops (this works best with thin, quick fry chops) 2 egg whites 1 tbsp Dijon mustard 1/4 tsp salt 1/8 tsp pepper 1/2 tsp dried oregano 1/2 cup breadcrumbs 1/2 cup grated Parmesan cheese
* In place of bread crumbs you could use panko crumbs, or left over stuffing mix that has been crushed into crumbs.
Mix egg whites with mustard, salt and pepper, and oregano in a bowl.
In another bowl combine the bread crumbs and Parmesan cheese.
Dredge each pork chop first through the egg white mixture, and then the bread crumb/cheese mixture.
Fry on the stove top (in pan coated with cooking spray) for 2-3 minutes a side, or until the pork is cooked through.
