Oven Pork Carnitas
I had a couple of packages of boneless country pork ribs and I wanted to
do something different with them. I love how easy this recipe is -- it
tastes like you've been cooking it all day, and yet it's only been a
couple of hours. A great alternative to regular taco filling.
3-4 lbs boneless pork (I used country ribs) 1 1/2 tsp salt 3/4 tsp pepper 1 tsp cumin (I love cumin so I added an extra 1/2 tsp) 1 onion, peeled and quartered 2 bay leave 1 tsp dried oregano leaves 2 tbsp lime juice 2 cups water 1 medium orange - juice and halves
In a large dutch oven, combine all of the ingredients. Bring to a medium simmer on the stove top. Cover the pot once it has been brought to a simmer, and place in a 300 degree oven.
Cook in the oven for 2 hours.
Remove meat from the dutch oven and shred. Spread meat on foil lined baking sheet. Bake in oven once again for about 8-10 minutes until the edges of the meat brown and crisp.
Remove onions, oranges etc from the liquid in the dutch oven and simmer the liquid down until slightly thickened. Spoon over baked pork and toss.
Serve as you would taco meat - with tortillas and your favorite garnishes.
It's easy as throwing it all into a pot.
Choose your favorite add-ons and fill a soft tortilla. Wonderful! You won't be able to eat just one!
