Old Fashioned Potato Soup
This would go well with our 7-up biscuits.
Ingredients
4-5 medium potatoes, peeled and diced 1 large onion, diced 1/2 c diced celery 1 1/4 c water 1 tbsp salt 1/4 tsp pepper
2 tbsp parsley 8 slices of bacon, cooked til crisp and crumbled 3 cups milk
Instructions
In a large pot, combine chopped onions, potatoes and celery, with the water.
Cover and simmer for about 15 minutes until vegetables are cooked.
You can either roughly mash the vegetables right in the pot of put them through a sieve and return them to the water they were cooked in. I usually just mash them in the water.
Add milk, salt and pepper. Reheat soup. Add in bacon and parsley a few minutes before serving.
If you find it too thin, you can add potato flakes to thicken it up.
Our homemade dinner rolls would go great with this recipe!
