Ingredients
1 1/2 cup cornmeal 1/2 cup flour 1 tsp baking powder 1 tsp salt 3/4 cup milk 1 egg, beaten 2 tbsp vegetable oil 2 tbsp minced green onion if desired
vegetable oil for frying
Sift dry ingredients together in a bowl.
Combine milk, eggs and oil (and minced green onions if desired)
Add milk mixture to dry ingredients, combining until moistened. Consistency is important -- add a little more milk if you can't drop the batter from a spoon.
Heat about 2 inches of oil in a hot skillet or to 375F in a deep fryer.
Drop batter into the hot oil from a spoon. Allow to cook until golden brown (about 3 minutes or so).
Drain on paper towels. This will make about 2 dozen hush puppies.
