Mom's Homemade Strawberry Shortcake
There's nothing in the world that's better than a dish of homemade strawberry shortcake after a hearty meal. It adds a touch of Summer to these dreary Winter days, and its so easy to pull together.
Cake
2/3 cup sugar 1/4 cup butter, softened 1 egg 1 tsp vanilla 1 1/2 cups flour 2 tsp baking soda 1/4 tsp salt 1/2 cup milk
Strawberries Whipped Cream
Preheat oven to 350F. Prepare an 8x8 baking pan with cooking spray.
Cream together sugar and butter in a large bowl. Add in egg and vanilla. Mix well.
In a small bowl combine the dry ingredients. Add the dry mixture to the creamed mixture alternating with the milk.
When mixed well, spread batter in the bottom of the prepared pan.
Bake for 20 minutes. Remove from oven and allow to cool. Cut the cake into 9 pieces.
When you're ready to serve your shortcake, slice the cake slices in half horizontally. Put a layer of whipped cream and strawberries in the middle, and on the top of the cake pieces.
