Ingredients:
1 lb hamburger ½ cup onion, chopped 1 can enchilada sauce (mild) 10 oz 1 can chopped green chiles 2 oz ½ tsp garlic powder 1 can sweet kernel corn 1 cup shredded Tex-Mex cheese 1 bag ( 6 oz) tater tots (potato puffs)
Directions:
Heat oven to 375F. Prepare a 9x9 pan with cooking spray.
In a skillet, brown hamburger with chopped onion. Drain.
Return hamburger to skillet and stovetop and add in enchilada sauce, chiles and garlic powder. Cook until heated thoroughly.
Spoon hamburger mixture into the bottom of the prepared baking pan. Cover with kernel corn (drained).
Sprinkle the shredded cheese over top of the corn, and then arrange the tater tots over top of the cheese.
Bake for about 40 minutes until the tater tots are cooked and browned.
Garnish as desired with sour cream, salsa, avocado slices etc.
