Mexican Quinoa
This recipe has been floating around the Internet for awhile and I've made something similar in the past. This version is simple, hearty and healthy. What more could you want when serving dinner for your family! Ingredients
2 cloves garlic minced 1 jalapeno, chopped (take the seeds and membrane out prior to chopping if you prefer less heat) 1 cup white quinoa, dry 1 can black beans, drained and rinsed 1 can kernel corn, drained 1 can fire roasted diced tomatoes 1 cup chicken stock 1/2 tsp cumin 1/2 tsp chili powder salt and pepper to taste 1 tbsp lime juice
In a large skillet, saute minced garlic and chopped jalapeno for about 1 minute.
Add in corn, black beans, tomatoes, quinoa and chicken stock.
Add in spices.
Bring to a boil.
Reduce heat to low, cover and allow quinoa to cook for 20-25 minutes.
Fluff quinoa and add in lime juice. Mix well and serve.
