Mexican Chicken Roll-ups
A spicy, cheesy chicken filled tortilla with an easy sour cream sauce, with fresh garnishes adding the perfect finishing touch. Serve it over rice, or just as they are -- both ways are delicious! Ingredients
Filling
2 1/2 cups cooked chicken, diced 1 pkg taco seasoning (or make your own) 2 cups shredded cheese 1/2 cup salsa 1/2 cup sour cream 1/2 can cream of celery soup 1 onion, chopped 10 flour tortillas
Sauce 1 cup sour cream 1 1/2 tsp taco seasoning 1/2 can cream of celery soup
Combine all filling ingredients, except for the tortillas. Mix well.
Place 1/3 cup of the filling in the middle of each tortilla. Roll up and place them in a 9x13 pan (sprayed with cooking spray) with the seam side down.
Combine the sauce ingredients and spoon over top of the tortilla roll-ups. Sprinkle with a little shredded cheese and bake in a 350F oven until every thing has been heated through.
Serve as is or over rice. Garnish with your favorite toppings.
