Mexican Casserole
Ingredients
1 1/2 lbs ground beef 1 onion chopped 1 can black beans, drained and rinsed 1 can diced tomatoes (or Rotel if you like things spicy) 1 can kernel corn, drained 1 pouch of Taco Seasoning (or make your own) 12 small corn tortillas 1 cup sour cream 1 cup shredded Mexican cheese
Cook ground beef and onion together until done. Drain and return to pan.
Add corn, tomatoes, and black beans with taco seasoning to ground beef. Mix well. Simmer for about 10 minutes.
Line a prepared 2 qt casserole dish on the bottom with 6 corn tortillas. Spoon on half of the beef mixture. Top with sour cream. (spread it the best you can).
Add another layer of 6 corn tortillas and then the rest of the beef mixture.
Bake at 350F for 25 minutes. Sprinkle cheese on top and return for another 5 minutes to melt it.
