Meat Loaf Tater Tot Casserole
Easy to pull together, throw it in the oven, steam some veggies or toss a salad for a side, and dinner is ready with a layer of meatloaf, then gravy topped with tater tots.
Note: change up the meatloaf recipe to your personal taste and/or favorite recipe! If you prefer, you may also sprinkle shredded cheese on top for the last 10-15 minutes of baking.
1 cup tomato juice 3/4 cup oats 1 beaten egg 1/4 tsp onion salt 1 tsp salt 1/4 tsp pepper 2 lbs hamburger 1 can cream of mushroom soup 1 regular sized bag tater tots
Combine juice, oats, egg, and seasoning. Add hamburger, and mix well. Press meat mixture down into the bottom of a 9x13 baking pan.
Spread undiluted mushroom soup mix over top of the meat mixture.
Arrange tater tots on top.
Bake at 350F for one hour. Allow to sit 10-15 minutes before serving.
Store leftovers in the fridge. Heats up well the next day.
