Mama's King Ranch Casserole
A classic family casserole -- creamy saucy chicken that can be a little on the spicy side, or make it a little tame if that's what you prefer. Either way its delicious! Ingredients
2-3 lbs cooked chicken, cubed 1 tbsp oil 1 onion, chopped 1 green pepper, chopped 1 (10 oz) can cream of mushroom soup, undiluted 1 (10 oz) can cream of chicken soup, undiluted 1 can (mild) Rotel (or 1 can of diced tomatoes if you prefer a less spicy casserole) 1/4 tsp chili powder 1/4 tsp cumin 1/2 tsp salt 1/4 tsp pepper 1/4 tsp garlic powder 10 small corn tortillas 2 cups shredded cheddar cheese
In a large over-sized skillet, saute the onions and pepper in the oil until tender. Add in the chicken, undiluted soups, and Rotel (or tomatoes) with spices. Combine well and heat through.
Tear corn tortillas into pieces. Place 1/2 of them in the bottom of a prepared 9x11 baking dish. Layer 1/2 of the chicken mixture over top, followed by 1/2 of the shredded cheese. Repeat these layers.
Bake 20-25 minutes in 350F oven until everything is cooked through and cheese is bubbly.
