Lime and Cilantro Rice
Ingredients
2 cups water 1 cup long grain rice 1 tbsp butter 2 tbsp fresh lime juice 1/4 cup freshly chopped cilantro lime zest if desired salt and pepper to taste
Bring water to a boil in a saucepan.
Add butter and rice. Turn down to simmer. Cover with a lid and cook for 15-20 minutes until water has been absorbed and rice is cooked.
Remove pan from heat, and add lime juice and cilantro.
Season to taste with salt and pepper (and lime zest if desired).
