A great Summer grilling recipe. Prepare the night before for best flavor. .
I can frozen lemonade concentrate (thawed) 2 tbsp brown sugar 2 tbsp soy sauce 1 tsp garlic powder 3/4 tsp fresh mint, chopped 4 large bone in chicken breast halves
Combine the first 5 ingredients in a large 2 gallon ziploc bag. Seal and shake to combine ingredients.
Open the bag and remove 1/2 cup of the marinade for basting.
Place the chicken breast halves in the bag and reseal, removing as much air as you can.
Place the bag with the chicken and the reserved marinade for basting in the fridge, preferably overnight. Flip the bag over every few hours, to evenly coat the chicken with the marinade. Leave in the fridge until you are ready to grill.
When your barbecue is ready, remove the chicken from the marinade and discard the bag and its contents.
Cook the chicken for about 10 minutes on each side, until the chicken is cooked through. Baste with the marinade as you grill.
