Ingredients
(makes 3 pies - easily converted to a single recipe)
3 packages of low fat cream cheese (fat free doesn't work), 3 cans of low fat sweetened condensed milk, 3/4 cup lime juice (I use the bottled kind) 3 graham cracker crusts (*)
Cream the cheese in your mixer until very smooth, add condensed milk, beat until well blended, add lime juice and beat for 10-15 mins at medium, pour mixture over crust and refrigerate for at least 4 hours. You can serve this with fruit or not.
Maryanne says: This is my "go to" dessert for family functions and pot lucks.
*Mom says: When I went to make this with my grandson -- I discovered I didn't have a graham crust on hand, and also no graham wafers. I did however have a box of lemon wafer cookies and made a crust by crumbling about 30 of so of them with a couple of tbsp of melted butter in my food processor and pressed them down in a tin foil pie pan. I sprinkled a few remaining crumbs on top -- hence the Lemon-Lime flavor of our version.
