Can be used as a pie filling, on toast, English muffins, or crumpets. Also, after you grill fish, you can brush some on the fish and then return it to heat to bake on the fish.
Ingredients
4 large eggs 1 1/2 cups+2 tablespoons granulated sugar 1 1/2 tablespoons fresh grated lemon rind Half cup fresh squeezed lemon juice 6 tablespoons lightly salted butter cut into 12 pieces
Directions
1. In food processor or blender, combine the first four ingredients and mix until well blended
2. Place liquid in top of double boiler (or metal bowl) over simmering water. Stir mixture constantly with wooden spoon until it is hot to touch.
3. Add butter one piece at a time, stirring until each piece is melted (approx 8-12 mins) DO NOT ALLOW MIXTURE TO BOIL OR IT WILL CURDLE!
4. When mixture is thick and creamy, remove from heat and our in to 2 hot (rinse hot water through them) clean 8 Oz jars.
5. Let cool before covering tightly and store in refrigerator. This recipe takes about 30-45 minutes to do from start to finish, but is well worth it.
